Seaweed has long been a delicacy in Asia, but now scientists see nutritional, economic and environmental benefits to building a robust kelp farming industry here in the United States. The attention on seaweed farming has just gotten a major boost as Amazon founder, and the richest man on the planet, Jeff Bezos has designated $100 million of his fortune to study and develop seaweed as a sustainable crop for a warming planet.
